Creme Brulee

Note: The king of desserts in our house. If we are in the mood for our favorite dessert treat, we'll take the time to make this gourmet (but not difficult) dessert. Brian has never preferred chocolate desserts, so he took to this one right away.

8 egg yolks
4 oz sugar

Stir together. Add seeds from one vanilla bean and stir.

Add one liter heavy cream. Place ramekins inside of baking dish. Pour cream mixture into ramekins until about 2/3 full. Add hot water bath to baking dish so that the water is about halfway up the sides of the ramekins. *I learned the hard way that it must be boiling hot water.

Bake in a 300 degree oven for about 50-60 minutes or until custard is set around the edges, but a little loose in the center. Remove from oven, but leave in water bath until cooled.

Chill for two hours or up to two days. When ready to serve, sprinkle superfine granulated sugar over the top of the custard. Carmelize with a torch or place under broiler. Garnish with fresh strawberries.

*Can add cinnamon or chocolate to vary the flavor of the custard.
