Note: Sallye is our friend, Connor Bales', mother. This woman epitimizes the Southern cook. Cornbread casserole is such a great Southern side dish.
1/2 cup butter, melted
1 box "Jiffy" cornbread muffin mix
1-8 oz carton of sour cream
1-15 oz. can of creamed corn
1-15 oz. can of whole kernel corn, drained
Mix all ingredients into a square baking dish and bake 1 hour at 350 degrees. Serves 6-8.
*I have omitted most of the butter before to make it a bit healthier and Brian said he liked it better.
