Mommy's Hot Chicken Spread

Note: Ginger serves this at almost every play date. I gave it the name "Mommy's Hot Chicken Spread" because we save this for the mommies and serve PB&J or chicken nuggets to the kids. It's a nice grown-up treat.

2 chicken breasts, boiled, and shredded
2 hard-boiled eggs, chopped
1 can cream of chicken soup
1/4 cup mayonnaise
salt to taste (Can be omitted because the soup has salt in it.)
1 tsp lemon juice
Shredded cheddar cheese

Mix first six ingredients together. Spread in 9" square baking dish. Bake in a 350 degree oven for 20 minutes, or until bubbly. Sprinkle cheese on top and bake just until melted.

Serve with Club crackers. Makes a nice lunch when eaten with a great tossed salad.
