Note: When I first moved to Oklahoma, then Texas, there were Black-Eyed Pea restaurants all over. Many of them have since closed, but not before I got to try this very popular dish. Terry, thankfully, has their recipe so we can continue to enjoy their baked squash.
5 pounds medium size yellow squash
2 eggs, beaten
1 C bread crumbs, plus additional
1 stick margarine
1/4 C sugar
salt, to taste
2 T chopped onion
dash of pepper
Cut tips of squash and cut each squash into 3 or 4 pieces. Drop squash into a large saucepan with enough boiling water to cover. Return to a boil, reduce heat and cook until tender. Drain in colander and mash.
Combine with beaten eggs, 1 C bread crumbs, butter, sugar, salt, onion and pepper. Turn into a 3-qt casserole that has been sprayed with Pam. Cover with a light layer of bread crumbs. Bake at 350 degrees for 20 to 25 minutes or utnil lightly browned.
