Note: This recipe is from Terry. I love making it, not only because it tastes so good, but it is identical to the Cherry Pie that my Grandma Barb made for my dad every Valentine's Day. Dad was always generous and shared a piece with us.
1 vanilla wafer crust, baked (recipe to follow)
1 (8 oz) pkg cream cheese
1 (15 oz) can Eagle Brand sweetened condensed milk
1/3 cup lemon juice
1 tsp vanilla
1 (1 lb 6 oz) can Cherry Pie filling
Let cream cheese soften to room temperature; beat until fluffy. Gradually add Eagle Brand while mixing; stir until blended. Add lemon juice and vanilla, blend well. Pour into prepared crust. Chill 2 to 3 hours before garnishing top of pie with cherry pie filling.
Vanilla Wafer Crumb Crust
28 vanilla wafers, finely crushed
1/4 cup sugar
1/4 cup margarine, softened
Thoroughly blend vanilla wafer crumbs, sugar, and softened butter. Pour mixture into a 9 inch pie plate. Press into an even layer against bottom and sides of plate. Bake in a preheated 375 oven for 8 minutes.
