Grandma Barb's Carrot Cake

Note: A military roommate of my dad's received this cake in the mail one day. Dad asked him for the recipe for this delicious cake. Grandma made it for my dad and for our family for years. The secret ingredient is the crushed pineapple. So yummy!

2 cups flour
1 tsp baking powder
1-1/2 tsp baking soda
1 tsp salt
1 heaping tsp cinnamon
2 cups sugar
1-1/2 cups oil
4 eggs
2 cups grated carrots
1-8 1/2 oz can crushed pineapple

Sift together flour, baking powder, baking soda, salt and cinnamon. Add sugar, oil, eggs; mix well. Add carrots and drained pineapple. Turn into 3 greased and floured 9 inch cake pans, or one 9 X 13 pan. Bake 350 degrees for 35-40 minutes. Frost with cream cheese frosting when cool.


Cream Cheese Frosting:

1/4 cup butter (Mom's recipe calls for 1/2 cup.)
4 oz. cream cheese
1/2 tsp vanilla
1/3 to 1/2 pound powdered sugar
scant salt

Cream butter with cream cheese and vanilla. Beat in sugar.
