Note: Nancy Greider taught eighth grade with me at Forestwood Middle School. She is a great cook. Here is her version of a Southern treat, cornbread stuffing. I had not heard of cornbread stuffing until I moved to the South. Of course, I hadn't heard of a lot of foods until I moved south!
2 pkgs cornbread mix (and ingredients to prepare the cornbread)
1/2 cup butter
1 good sized onion, chopped
1 large stalk celery, chopped
1 T poultry seasoning
1 tsp salt
1/4 tsp pepper
1 pound lightly seasoned sausage, precooked
Prepare cornbread as directed. Cook onion and celery in butter until tender. Cook sausage. Crumble cornbread and add poultry seasoning, salt, and pepper. Wet with hot water until moist. Add celery, onion, and sausage. Mix well. Stuff an 18-20 pound turkey lightly.
