Terry's Black Bean Salsa

Note: Terry served this to us last summer on the porch one afternoon. I remember being so hungry that day. I gobbled up most of the bowl. It's very healthy and refreshing. I recommend adding the juice of one lime and salt. Don't be shy with the salt. Bean dishes need plenty of salt in order to bring out the flavor of the beans.

3 cans black beans, rinsed and drained
1 can Mexican style corn, drained
2 cans Rotel, partially drained
2 tomatoes, diced
2 bunches green onions, chopped
cilantro for garnish

Refrigerate eight hours or overnight. Makes 40-2 T. servings.
